  • 1 Tbsp coconut oil
  • 1 garlic clove
  • 4 ounces chicken breasts, boneless, skinless, cut into thin strips
  • 6 ounces broccoli florets
  • 1/4 cup red bell pepper, chopped
  • 1/4 cup orange bell pepper, chopped
  • 1/2 cup carrots, diced
  • 1/8 cup chicken broth, low sodium
  • 1/2 Tbsp cornstarch
  • 1 Tbsp soy sauce, reduced sodium
  • 1 small roma tomato, chopped
  • 1 cup basmati rice, cooked


  • Heat the oil in a pan or wok and brown the garlic until fragrant. Add the broccoli, bell peppers, and carrot and sauté for about 5 minutes until cooked through. Remove from the pan and set aside.
  • In the same pan, add the chicken strips. Cook until the meat is cooked to your liking with internal temperature reaching at least 165°F (74°C).
  • Prepare the sauce by mixing the chicken broth, corn-starch, and soy sauce in a bowl.
  • Put the cooked vegetables, the sauce, and the tomato with the meat in the pan. Heat and stir until the sauce is thick.
  • Serve with rice.
