Ingredients
- ½ cup rolled oats
- 2 Tbsp pecans, chopped
- ¼ tsp cinnamon, ground
- ⅛ tsp nutmeg, ground
- ⅛ tsp low-sodium salt
- ½ cup unsweetened almond milk
- 1 Tbsp pure maple syrup
- ½ large egg
- ¼ tsp vanilla extract
- 2 Tbsp unsweetened applesauce
Instructions
- Preheat the oven to 350°F (175°C). Grease a small baking dish.
- In a large bowl, mix the oats, chopped pecans, cinnamon, nutmeg, and salt.
- In another bowl, whisk together the almond milk, maple syrup, egg, vanilla extract, and applesauce.
- Combine the wet and dry ingredients, then pour into the prepared baking dish.
- Bake for 35-40 minutes, until the top is golden and the oatmeal is set.
- Serve warm, optionally topped with additional pecans and a drizzle of maple syrup.
