Ingredients
  

  • ½ cup rolled oats
  • 2 Tbsp pecans, chopped
  • ¼ tsp cinnamon, ground
  • tsp nutmeg, ground
  • tsp low-sodium salt
  • ½ cup unsweetened almond milk
  • 1 Tbsp pure maple syrup
  • ½ large egg
  • ¼ tsp vanilla extract
  • 2 Tbsp unsweetened applesauce

Instructions

  • Preheat the oven to 350°F (175°C). Grease a small baking dish.
  • In a large bowl, mix the oats, chopped pecans, cinnamon, nutmeg, and salt.
  • In another bowl, whisk together the almond milk, maple syrup, egg, vanilla extract, and applesauce.
  • Combine the wet and dry ingredients, then pour into the prepared baking dish.
  • Bake for 35-40 minutes, until the top is golden and the oatmeal is set.
  • Serve warm, optionally topped with additional pecans and a drizzle of maple syrup.
