Ingredients
- 2 large eggs
- ¼ cup mushrooms, sliced
- ½ cup spinach, fresh
- 2 green onions, chopped
- ½ clove garlic, minced
- ½ Tbsp olive oil
- ¼ tsp thyme, dried
- 1/16 tsp low sodium salt
- ⅛ tsp pepper
- ¼ cup rolled oats
- ½ cup almond milk, vanilla, unsweetened
Instructions
- Preheat the oven to 350°F (175°C).
- In a large oven-safe skillet, heat olive oil over medium heat. Add the onion and garlic and sauté until softened.
- Add the mushrooms and cook until they release their moisture and begin to brown.
- Stir in the spinach and cook until wilted.
- In a bowl, whisk the eggs with thyme, salt, and pepper. Pour the eggs over the vegetables in the skillet.
- Transfer the skillet to the oven and bake for 15-20 minutes, or until the frittata is set and lightly browned on top.
- While the frittata is baking, cook the oatmeal in the almond milk according to package instructions.
