Ingredients
  

  • ¼ cup quinoa, rinsed
  • ½ cup unsweetened almond milk
  • ¼ tsp vanilla extract
  • tsp cinnamon, ground
  • 1/2 Tbsp maple syrup
  • ¼ cup mixed berries, fresh or frozen
  • 1 Tbsp almonds, chopped
  • 1/4 Tbsp chia seeds

Instructions

  • In a medium saucepan, combine the quinoa, almond milk, vanilla extract, and cinnamon. Bring to a boil, then reduce heat to low and simmer for 15 minutes, or until the quinoa is tender and the liquid is absorbed.
  • Stir in the maple syrup and cook for an additional 1-2 minutes.
  • Divide the quinoa porridge into bowls and top with mixed berries and chopped nuts. Add chia seeds.
  • Serve warm.
