- ½ medium sweet potato, peeled and diced
- ¾ tsp olive oil
- 2 stalks green onion, chopped
- ½ cup spinach, fresh
- ½ clove garlic, minced
- ⅓ cup firm tofu, crumbled
- 1 Tbsp black beans
- 1/8 tsp low sodium salt
- ⅛ tsp pepper
- ⅛ tsp smoked paprika
Instructions
