Ingredients
  

  • ½ medium sweet potato, peeled and diced
  • ¾ tsp olive oil
  • 2 stalks green onion, chopped
  • ½ cup spinach, fresh
  • ½ clove garlic, minced
  • cup firm tofu, crumbled
  • 1 Tbsp black beans
  • 1/8 tsp low sodium salt
  • tsp pepper
  • tsp smoked paprika

Instructions

  • Heat the olive oil in a skillet over medium heat. Add the onion and garlic, and sauté until softened.
  • Add the diced sweet potatoes and cook, stirring occasionally, until they are tender and slightly crispy on the edges, about 10-15 minutes.
  • Stir in the crumbled tofu and cook until the tofu is heated through and slightly golden on the edges, about 5-7 minutes.
  • Add the black beans and spinach and cook until wilted. Season with salt, pepper, and smoked paprika.
